Okay. I was extremely skeptical of these little water-filled baggies of "fake noodles". I had read horror stories about the fishy odor and rubbery texture. As a low-carb junkie, I REALLY missed the sauces and meals associated with pasta. Enter the Miracle Noodle.

Here's what I feel should be addressed:


- THE SMELL. Maybe my sinuses are flared up worse than I realize, or maybe I'm at a genetic disadvantage with a lowered sense of smell. But whatever the case, I did NOT find the smell oh-so-offensive as others have described. I actually braced myself as I cut the pouch open the first time -- ready for the worst -- but I didn't smell anything until I literally put my nose an inch above the open bag. And I'd describe the smell as more of a "brine" than a "fish" odor. C'mon guys, it's not bad.

- THE TEXTURE. I've found that the texture varies greatly on the preparation of the noodles. My first time eating them, I was rushed and starving... so I ate them straight out of the microwave tossed in pesto sauce. Not so great -- they were definitely rubbery this time. BUUUT, the SECOND time I prepared them, I made a creamy based sauce (melted 1 oz. cream cheese, 1 Tbs heavy cream, and 2 tsp. coconut oil, topped with some curry powder) and LET IT SIT for 2-3 minutes after preparing the dish. This way the sauce reeeally soaked into the noodles and gave them a softer and less-rubbery texture. Oh, and I just nuked them in the microwave this time, too. THIS time was good. Definitely a more "noodle-like" texture. I ate every last noodle!




Also, some tips I've read are to microwave the noodles twice PRIOR to preparing them.

I am not sure how long Miracle Noodles have been around, I discovered them sort of by accident.

I am about 8 to 10 years late to the low carb lifestyle but I figured any diet that allows me to eat meats and cheeses can't be too terrible.

All was fine until I started missing my old carb friend...pasta. IT was a crippling blow to my diet as I literally went into anxiety mode everytime I saw pasta in a tv show, commercial, movie, read about it...hell, I almost had a breakdown while watching "Lady and the Tramp".

Almost as a joke I Googled "zero carb pasta" just to laugh at myself but something unexpected happened. No, Google did not grow a hand and smack me for being stupid, it actually returned the Miracle Noodle page in the results.

I was skeptical...who wouldn't be? It is simply not possible to get a real pasta experience from a plant. Or so I thought! On a whim and without doing a terrible amount of research I ordered a ten pack of angel hair noodles. 70 glorious ounces of zero carb/zero calorie noodly goodness.

For the record, the following is true:

They stink. Yes, there is an odor when you open the package due to fermenting, but once the noodles are washed and boiled the smell is gone and there is no foul taste associated with the smell.

They are flavorless. Yes, they don't have a starchy flavor so common in pasta and noodles because they are not made from starch. They are simply plant fiber.

They have a rubbery texture. Sort of, but if you follow the instructions this is minimized and the end result is on par with a toothsome al dente pasta. It is not like chewing on rubber bands.

The noodles do take on the flavor of whatever you cook them in, sort of similar to the way tofu operates.

Okay.....I tried these noodles initially because of the HCG Diet. I continue to use them now because they are delicious! Not to mention how good they are for you.
If you have never had them before....be ready for the smell of fish when you first open the bag. (they are stored in water) The key to getting the smell out is rinsing thoroughly in cold water before cooking them.
They are easily prepared....
I found that pouring boiling hot water over the noodles to warm them works great, opposed to boiling them in the water. Patting the noodles dry (I use paper towels) before adding your favorite topping is a must!! This keeps them from becoming slimy. If you have left overs, they reheat wonderfully!! In fact I find everything taste better the next day.
The texture is definitely different from egg noodles. They are kind of like gummy worms without any flavor. The noodles absorb the flavor of whatever you top them with. Spaghetti & stir fry are a couple of my favorites!!
One last note.....
The unopened packages store without refrigeration and have a 6 month shelf life.
